And it's the perfect weather for all things pumpkin. For sharing big hot bowls of curry, chili and oatmeal with friends and family. For sipping steaming mugs of tea, snuggled up in the coziest blanket, watching the rain drops pitter patter.
Yesterday was a rainy one. Gray skies, rain-stained windows and just enough to chill to make you glad it's autumn still.
So I decided it was time to whip up some cozy pumpkin eats (and the most delicious, spicy green curry for dinner...if I do say so say myself ;)

A few friends have asked for the pumpkin recipes, so here they are!
For both the bread and the muffins, I adapted this basic pumpkin bread recipe from Simply Recipes. I also adapted the orange glaze included there.

F O R T H E B R E A D . . .
⩥ 1/2 cup sugar (instead of 1 cup)
⩥ substitute cloves instead of allspice
⩥ 1/2 cup olive oil (instead of 1 cup butter)
⩥ + handful of dark chocolate chunks (about 1/4 cup maybe?...really, throw in whatever looks good to you. ;) Also, I actually used extra dark chocolate with 85% cocoa, which I really liked because it has zero sugar and its slight bitterness helped balance out the sweetness of the rest of the bread/glaze)
⩥ - orange zest (I didn't have any oranges on hand)

⩥ I used whole wheat flour instead of white
⩥ 1/2 cup powdered sugar (I basically halved the recipe...and I still had a bit of glaze left over)
⩥ 2 Tbl unfiltered apple juice (I didn't have OJ and really ended up loving the hint of apple in the glaze)
⩥ 1/4 tsp almond extract (I also didn't have any vanilla, so I used this and it was the perfect pairing for the apple flavor)

⩥ 3/4 cup pumpkin (instead of 1 cup)
⩥ 1/4 cup ripened banana (pre-smashed...about 1/2 a banana)
⩥ substitute cloves instead of allspice
⩥ 1/2 cup olive oil (instead of 1 cup butter)
⩥ - orange zest (I didn't have any oranges on hand)
⩥ + 1/4 cup dried cranberries
⩥ + 1/4 -1/2 cup mixed raw nuts (I used a mix of about 1/4 nuts I already had which included walnuts, almonds + cashews)
And to top it off...a little week 31 bump glimpse shot for ya :)
Well, I'm off to chow down on that leftover curry I made (possibly another potential post??).
